I’ve decided to add a new type of post to my blog: a flexible meal plan that incorporates similar ingredients into each meal. I intend to post a meal plan each week…but let’s face it, I can barely put my shoes away let alone scour the internet for delicious recipes/craft a witty post/create some sort of eye-catching logo/etc. I mean, my counter is covered in a variety of Tupperware, snacks, pump parts, mail…the list goes on and on, but what I’m trying to say is that this post is fairly low on my priority list. The only thing going for me at this point is that I love posting, and hate chores, and I love making time for the things I love. In the end, that means that YOU, the reader, will benefit!
Enough about me and my backwards priorities. I’m about to make your life AWESOME. My *brilliant* idea with these posts is to find five-ish recipes from the interwebs/Pinterest that use similar and possibly even seasonal ingredients. They won’t all use the same ingredients, because that would be ingredient-overload, but there will be a general theme for the week. That way, when you buy a block of feta cheese, let’s say, you can actually use up the whole thing.
This is a work in progress. Some of the recipes might be hard to make on a weeknight. I hate to encourage people to stray from the original recipe, since someone else worked hard to craft it, so plan accordingly. You can make some of the more complicated recipes on a weekend when you have more time, and prep ahead with ingredients.
This week, I started by choosing one ingredient: arugula. I love arugula, and I love that there are so many ways to use it. Once I began looking for recipes, the rest of the ingredients fell into place; prosciutto, mozzarella, and feta. Let’s begin!
The photo of this Prosciutto Arugula Burrata Pizza from The Secret Ingredient Is jumped out at me as soon as I saw it. The title alone inspired me to run to the store so I could make it! The dough is made from scratch, so this might be a good weekend meal.
Watermelon, feta, and arugula are the basis of this beautiful Spicy Watermelon Arugula Salad from Rhubarbarians. This might work for a light lunch, and looks perfect for summer!
