Peach and Apricot Parfaits

A three-ingredient breakfast featuring fresh peaches, apricot preserves, and yogurt.

Serves: 2 servings
  • 1 large peach, cut into bite-sized pieces (it's okay to leave the skin on)
  • ½ cup apricot preserves or jam
  • 1½ cups plain yogurt
  • Granola (optional)
  1. Place ¼ of the peach pieces in a glass.
  2. Top with ½ of the apricot preserves, and then with ½ of the yogurt.
  3. Top the yogurt with another ¼ of the peaches.
  4. Repeat the entire layering process in a second glass.
  5. Top each glass with granola, if desired.
