Since Thanksgiving is around the corner, it’s time to start thinking about sides. Turkey might get the most hype, but we all know that side dishes are the best part of the meal. Today’s roundup is all about one of my favorite fall veggies that makes a perfect Thanksgiving side dish: winter squash. Winter squash refers to a number of types of squash: butternut, delicata, hubbard, kabocha…the list goes on and on. These squashes can be left whole or pureed, roasted or simmered, and always taste great. Some of these winter squash recipes aren’t traditional Thanksgiving side dishes, but looked too good to leave out!

My own Butternut Squash Mac and Cheese doubles as a main dish with hidden squash, which is a perfect way of fooling kids (and more picky adults) into eating their veggies!

Connoisseurus Veg’s Miso Kabocha Squash Soup with Maple Roasted Walnuts is a vegan soup made with one of my favorite winter squashes. Miso would certainly add an interesting twist to a Thanksgiving side, don’t you think?
Winter Squash Carbonara with Broccoli Rabe by Andy Boy isn’t exactly a Thanksgiving side dish, but would be a perfect way to use your leftover roasted squash.
Jeannette’s Healthy Living has one of the healthier looking sides on this list: Lentil Kale Whole Grain Beet Winter Squash Mushroom Salad . It’s a long title for what looks like a simple but filling side dish. This could even work as a vegetarian main.
My favorite vegan side or main dish that’s perfect for Thanksgiving includes none other than the mighty pumpkin: Pumpkin Kibbeh. Though the flavors are much more Middle Eastern than traditional American, I’m sure the vegetarians at your table would thank you.
Butternut Squash Hummus by Minimalist Baker (one of my favorite food blogs/my inspiration to eat more plants) would certainly be welcome at our Armenian-inspired Thanksgiving dinner. Fact: there’s no wrong way to eat hummus.
5-Ingredient Butternut Squash Fritters by Just A Taste look soooo yummy! Why wait until Thanksgiving to make these?
Just A Little Bit of Bacon’s recipe for Butternut Squash Potato Gratin with Brie and Thyme is the most obvious Thanksgiving side dish of the bunch; traditional potato gratin meets butternut squash. What’s not to like?
Finally, Roasted Butternut Squash with Pomegranate and Pistachios. Big flavors with few ingredients, this recipe is sure to please everyone.
