Five-Ingredient Mexican Rice

  • 1 teaspoon canola or vegetable oil
  • 1/4 cup diced onion
  • 1 cup long grain rice (I used jasmine)
  • 1/2 cup salsa (I used half regular salsa and half salsa verde, but you can use whatever you have)
  • 1-1/2 cup water
  • 1/2 packet Goya Sazon
  • salt to taste
  • Chopped cilantro optional


  1. In a 1-2 qt covered saucepan, heat the oil over medium heat for one minute.
  2. Add the onion and rice to the oil and saute for 2-3 minutes, stirring occasionally.
  3. Add the salsa, water, and Sazon, and stir. Bring to a boil.
  4. Once the rice starts to boil, reduce to very low (the lowest setting you have), cover, and cook for 15 minutes. Do not open the lid until the timer goes off!
  5. Season with salt to taste.
  6. Serve, garnished with chopped cilantro if desired.
