Green Cucumber Sauce

A vibrant, vegan sauce packed with an herby punch and cool cucumber. This is perfect as a dipping sauce, marinade, or dressing. 

Servings 2 cups

Ingredients

  • 1 cup parsley, packed (mostly leaves, but some stems are okay)
  • 1 cup cilantro, packed (mostly leaves, but some stems are okay)
  • 1 medium-large cucumber, peeled and chopped
  • 1/4 cup extra virgin olive oil
  • 2 tbsp water
  • 1 clove garlic
  • 1/2 lime, cut into pieces
  • salt

Instructions

  1. Add all ingredients except salt into a blender, and blend on high until completely smooth. Add salt to taste. Serve alongside meat, fish, chicken, vegetables, or anything else you can think of.
