Easy Zucchini Scallion Fritters

Easy Zucchini Scallion Fritters are one of the best ways to use up all of your seasonal CSA produce! With only 6 ingredients, this prep-ahead recipe is perfect for summer.

Ingredients

  • 3 cups shredded zucchini or other summer squash
  • 1/2 cup all purpose flour
  • 2 eggs
  • 1 cup sliced scallions
  • 1/2 tsp sea salt, plus more to taste
  • canola or avocado oil
  • sour cream or plain yogurt (optional)

Instructions

  1. Combine zucchini, flour, eggs, scallions, and salt together in a medium sized bowl.

  2. Pour enough oil into a large non-stick frying pan to coat the bottom, and heat over medium high. Drop a small drop of the zucchini mixture in to test the temperature; it should immediately start to form small bubbles around the outide.

  3. When the oil is hot enough, drop 1.5 tbsp or so of batter into the pan to make each fritter. You can likely fit about 4 fritters in the pan at a time.

  4. Cook until light brown on one side, about 3 minutes, then flip over. Cook until browned on the other side. Remove carefully with a slotted spatula to a plate covered in paper towels to drain.

  5. Repeat with remaining batter until all fritters are cooked. You can keep the cooked fritters warm in a low oven (170-200F) until ready to serve.

  6. Serve with sour cream or yogurt on the side, if desired.
