Jamaican-Inspired Instant Pot Chicken

A spicy and flavorful chicken recipe that tastes like it cooked all day. Please note, the active prep time takes about 5 minutes, but the chicken should marinate for at least 1 hour (overnight is better). This is a truly simple weeknight meal.

Ingredients

  • About 2 lb bone-in chicken drumsticks and thighs skin can be on or off
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon canola oil
  • 2 tablespoons soy sauce
  • 2 tablespoons dried Jamaican jerk seasoning without salt such as Gryffon Ridge brand
  • 1 teaspoon sea salt

Instructions

  1. Place the chicken pieces in a resealable freezer bag large enough to hold them.
  2. Add all the other ingredients and seal the bag. Gently turn the bag to mix the ingredients and fully coat the chicken.
  3. Refrigerate for at least 1-2 hours, but overnight is better.
  4. Place the chicken and marinade in the bowl of the Instant Pot. Add 1/2 cup water. Close the Instant Pot and the vent on top (refer to your pot's manual if you have questions).
  5. On manual mode, set the timer for 17 minutes on high pressure.
  6. Use manual release to release the pressure when the timer goes off.

  7. Remove the pieces of chicken. Serve with white rice. You can spoon some of the cooking liquid over the chicken and rice, if desired .
