Ingredients
1 15.5ozcan chickpeasdrained
1 14.5ozcan diced tomatoesI used Hunts diced tomatoes in sauce, but you can use another kind
2medium cloves garlicroughly chopped into pieces
1 2/3-3/4lbcod filet
a few drizzles of olive oil
1-2teaspoonsfinely chopped chivesoptional
Salt and pepper to taste
Instructions
Preheat the oven to 350 F
In a medium-large oven-proof skillet or dish, put the chickpeas, tomatoes, and garlic. Stir a few times to combine.
Nestle the cod into the chickpea and tomato mixture, spooning some of it over the top of the cod, and drizzle with a little olive oil (about 2 teaspoons). Sprinkle with some salt.
Bake for about 30 minutes uncovered, or until the cod is cooked through. It should be opaque and easily flake apart
Optional: sprinkle the whole dish with chives.
To plate: Spoon some of the chickpea and tomato mixture onto the plate, and top with a piece of cod.
