Thai Pumpkin Soup

  • 1 29 oz can of pureed pumpkin
  • 1 13.5 oz can coconut milk
  • 2 cups water
  • 4 teaspoons Thai red curry paste
  • Salt to taste


  1. Put pumpkin, coconut milk, water, and curry paste in a medium-sized soup pot over medium heat, and stir well to combine.
  2. Bring just to a simmer, then add salt to taste.
  3. Serve warm. You may garnish with slices of jalapeƱo or other hot peppers.
