Ingredients

  • 28 oz marinara sauce (about 3 cups)
  • 1 package tortellini, about 9 oz. Use vegan if preferred (I like the Kite Hill Almond Milk Ricotta Tortellini)
  • 1 bunch fresh spinach, roughly chopped. (about 3 cups packed spinach leaves)

Instructions

  1. In a medium sized pot, add the marinara sauce and 3 cups of water, and stir to combine. Turn to high heat until the sauce comes to a boil, and then reduce the heat to medium, maintaining a simmer.

  2. Add the tortellini, and cook until they float to the top of the soup, indicating they are done cooking (mine took about 5 minutes).

  3. Add the chopped spinach leaves, and stir well to wilt down. Turn off the heat and serve immediately.

Recipe Notes

You can adjust the amount of water to the desired consistency. If adding additional vegetables, add at the same time as the tortellini to ensure they are cooked through. If substituting leafy greens, add when you would add the spinach. If adding sausage, add pre-cooked sausage once the tortellini has cooked through.
