
Easy Vegetarian Tortellini Soup is an incredibly flavorful 3 ingredient weeknight meal that takes only fifteen minutes from start to finish.
In a medium sized pot, add the marinara sauce and 3 cups of water, and stir to combine. Turn to high heat until the sauce comes to a boil, and then reduce the heat to medium, maintaining a simmer.
Add the tortellini, and cook until they float to the top of the soup, indicating they are done cooking (mine took about 5 minutes).
Add the chopped spinach leaves, and stir well to wilt down. Turn off the heat and serve immediately.
You can adjust the amount of water to the desired consistency. If adding additional vegetables, add at the same time as the tortellini to ensure they are cooked through. If substituting leafy greens, add when you would add the spinach. If adding sausage, add pre-cooked sausage once the tortellini has cooked through.
