It’s chilly outside! Time to turn on the heat, snuggle with a blanket on the couch, and eat lots and lots of soup. I like all soups, but chicken soup is what’s on the menu tonight. I decided to make it because I had some leftover rotisserie chicken that I needed to use up. But, I’m also starting to get a little bit of a cold, and chicken soup has actually been proven to help with cold symptoms (see here for a summary). Plus, I have a quick way of making it that takes just about no time or energy at all.
- Use noodles instead of rice
- Add potatoes
- Add or substitute any vegetable you like
- Add different herbs or spices
- Add lemon (I usually do this, and it’s really good!)
