I’ve broken down the recipes down into FOUR categories: no cook, stovetop, Instant Pot, or oven. Most recipes have few ingredients, and can even be prepped ahead!

Shaved Brussels Sprouts and Kale Salad is a no-cook hearty salad that takes about 20 minutes to prepare, and can easily be prepped ahead.
Beet and Carrot Salad with Ginger Dressing is another hearty, no-cook salad that can be made completely ahead of time!
