Hi, everyone! After two months of *nailing* being a mom, I’m back in the kitchen and ready to share some recipes with you. Well, one recipe. I have a two month-old–cut me some slack.
So, what did my summer look like? Nurse-sleep-diaper change-nurse-diaper change-beach-nurse-nurse-nurse-nurse…you get the picture. There was more sleeping (me) than I thought there would be, but there was also a lot more crying (both me and the baby) and nursing (baby) than I ever thought was possible. I will admit that on many occasions, my only accomplishment of the day was showering. On good days, my accomplishments included cooking dinner, but usually little else. And, now that the baby is a little less needy than before (i.e. can now lie on a play mat and swat at a toy/make blue steel faces at himself in the mirror for 30 minutes), I even had a few extra minutes to photograph my dinner prep to share it with you.
I chose to share this recipe because of how easy it is. Not only can it be prepared in less than 10 minutes, but it was quick to photograph, making the whole blogging process not so difficult. Win-win.
A few days ago, I came across this recipe for tilapia with mustard chive sauce on the Food Network website. It sounded pretty good, so I decided to make it. However, many of the reviews said the sauce was a little grainy, so I substituted half and half for the yogurt to improve the texture. I didn’t have any chives, so I substituted a little minced onion to get that oniony flavor, and the result was quite good.
Why should you make this? It was inexpensive (I think like maybe $6 for the tilapia and almost negligible for the other ingredients) , quick, easy, tasty, healthier than most takeout, etc. There’s no reason NOT to make it, so just try it and then thank me later.
Preheat the broiler, and then place the fish filets on a baking sheet (lined with foil if you want to have an easier cleanup). Sprinkle with salt and pepper. Place under the broiler for 6-8 minutes until it’s cooked through.
Meanwhile, place minced onion and dijon mustard in a small bowl.
Add half and half
Squeeze some lemon juice in.
Stir together (a fork makes it easier) and add salt and pepper.
Remove the fish from the oven. It should be opaque.
Drizzle the sauce over the fish, and top with some chopped parsley. Serve over/beside the vegetable of your choice (in this case, sautéed zucchini)
Easy Tilapia with Mustard Cream Sauce
Prep and cook time: 9 minutes
Serves 2
Ingredients:
2 tilapia filets (a little less than 1/2 lb each)
1 teaspoon finely minced onion
2-3 tablespoons dijon mustard
2-3 tablespoons half and half
1-2 teaspoons lemon juice
1/2 teaspoon fresh parsley, finely chopped
salt and pepper
Pre-heat the broiler. Place the tilapia on a baking sheet, sprinkle with salt and pepper, and place under the broiler for 6-8 minutes until cooked through (the fish should be opaque and flake easily).
Meanwhile, stir together the onion, 2 tablespoons each of half and half and dijon mustard, 1 teaspoon of lemon juice, and salt and pepper to taste. Taste the sauce, and add more half and half/mustard/lemon juice to taste.
Plate the tilapia, and drizzle half of the sauce over each piece. Sprinkle half of the parsley over the top of each piece and serve.

- Substitute a different fish (cod, halibut, haddock, maybe even salmon)
- Use milk instead of half and half
- Top with different fresh herbs, or stir some into the sauce
