Green Cucumber Sauce is a vibrant, vegan sauce packed with an herby punch and cool cucumber. This is perfect as a dipping sauce, marinade, or dressing.
In an attempt to bring some sunshine to this oh-so-cold winter, I’ve decided to share a summery recipe. Green Cucumber Sauce tastes just like summer in a bite.
This sauce was created because, frankly, I love sauces. Plus, I had a lot of herbs to use up quickly, and what better way to do that then by making a sauce? Seriously, though, dips and dressings make even the most boring meals feel special, and this one is no exception.
There’s something about the herbs, cucumber, and lime that just scream SUMMER. Maybe it’s because I’m imagining myself dousing some grilled steak with this sauce while eating dinner on the patio. Don’t we all need to dream?
Luckily, these ingredients are all available in the winter or summer at any grocery store. While the flavors a bit summery, this dressing is still just as tasty in wintertime.
Want to make this recipe your own? Try adding different herbs, like fresh basil. Omit cilantro if you don’t like it. Use lemon instead of lime, or increase the amount of either to add some more acidity. Use more garlic, add scallions, or even shallot. Thin out the sauce with extra oil, or even some more water. You could thicken it by using less of these liquids. The possibilities seem endless.

Green Cucumber Sauce
A vibrant, vegan sauce packed with an herby punch and cool cucumber. This is perfect as a dipping sauce, marinade, or dressing.
Ingredients
- 1 cup parsley, packed (mostly leaves, but some stems are okay)
- 1 cup cilantro, packed (mostly leaves, but some stems are okay)
- 1 medium-large cucumber, peeled and chopped
- 1/4 cup extra virgin olive oil
- 2 tbsp water
- 1 clove garlic
- 1/2 lime, cut into pieces
- salt
Instructions

Add all ingredients except salt into a blender, and blend on high until completely smooth. Add salt to taste. Serve alongside meat, fish, chicken, vegetables, or anything else you can think of.
