Today’s recipe roundup is all about one of the most under appreciated vegetables on the block: cabbage. Cabbage is inexpensive, good for you, and surprisingly versatile. Ever since plant-based eating became more popular, I’ve seen cabbage recipes popping up all over the internet. I’m not surprised; it’s a hearty vegetable, and with a little creativity, can replace meat as a filling main course.
I picked up a head of Napa cabbage this week at the grocery store because it looked good and I thought of a few things I could make with it. To my surprise, though, I still had some left after using it in two different recipes! For about $2, I had a veggie that carried me through three different dinners this week. The challenge, of course, was deciding what to make for all these meals. I’ve rounded up some of the prettiest looking cabbage recipes on the internet for you (and I) to try.
