As summer days are winding down (*sob*), my garden is becoming more plentiful. Woohoo! Depending where you live, zucchini is (are? is zucchini the singular or plural?) growing like crazy these days. It can be hard to find exciting ways to prepare it, so let me do the hard work. Here are some of my best finds from the interwebs.
I’d like to start out on the right foot with my own recipe for Armenian Dolma. Zucchini, eggplant, or really any of the veggies in season right now can be stuffed with a meat and rice mixture and cooked in tomato sauce. Yum!
Baked Garlic Parmesan Zucchini Chips from Diethood look crispy and delicious.
Looking for something sweet? Carrot Apple Zucchini Bread from Mom On Time Out might be the thing, and it even sounds a little healthy!
Zucchini Fritters from Natasha’s Kitchen combine my love of hash browns (or really any shredded and fried veggie) with my overabundance of zucchini. Win-win.
Zucchini Rollatini are one of my favorite things to make without a recipe because they’re so easy! But just in case, you can check out the link to this version by Skinnytaste.

Olive Oil Garlic Zucchini Noodles is a lighter dish, and gives you an excuse to buy that spiralizer you’ve been eyeing.
STILL have some leftover zucchini? Here are a few more ideas:
- dice it, saute in oil, and add into meatloaf. OR, shred it and add it raw into meatloaf (but don’t put too much or else there might be too much liquid)
- Add it into meatballs
- Marinate sliced zucchini (the long way) with Italian dressing or another vinaigrette, and grill
- Zucchini tots? Is that a thing? Probably
- Rough chop and roast in the oven
Last, but not least, a no-recipe recipe, courtesy of my mom, who made this probably once every two weeks for my entire childhood: saute half of a sliced onion in some olive oil, and add roughly chopped zucchini and a tablespoon or so of tomato paste. Cook until the zucchini is tender. Done.
