Easy Vegetarian Tortellini Soup is an incredibly flavorful 3 ingredient weeknight meal that takes only fifteen minutes from start to finish.
Easy weeknight meals are the name of the working mom game, and I’ve got a good one: Easy Vegetarian Tortellini Soup! With three ingredients and fifteen minutes, you can get this on the table with time to spare. As a bonus, there are tons of ways to customize this soup to fit your family’s tastes–keep reading to find out how.
I can’t really believe that I found a soup that is 1) so easy and 2) loved by everyone in my family. That’s right: my picky children ate this soup, and both asked for seconds. A day to be remembered in history.
Without further adieu, the three ingredients are….1) marinara sauce, 2) tortellini, and 3) fresh spinach. That’s it.
What kind of marinara sauce do you use?
I do know how to make marinara, but the last time I made marinara was probably 3 years ago. Never fear, though. I discovered Rao’s Marinara sauce, and my life has never been the same. In short, I use Rao’s.
You can change it up by using a different brand, or a different flavor of Rao’s. Arrabiata would make a spicier soup. Tomato Basil would also taste great. You really can’t go wrong with any variety of these sauces.
What about the tortellini?
Tortellini, for those who aren’t in the know, are little cheese-filled pasta. They can really be filled with almost anything (cheese and spinach, multiple cheeses), but cheese is the most common filling. I made things interesting by buying VEGAN tortellini. Yup, that means no cheese. Instead, they’re filled with almond milk ricotta, and honestly, you can’t even tell it’s not cheese. You can use whichever tortellini you want, but I would stick with a fresh rather than dried variety. Find tortellini in the refrigerated section of your grocery store; mine are usually adjacent to the artisanal cheese section.
What kind of spinach can I use?
I am a huge fan of frozen spinach. Huge. For this soup, though, I used fresh. I wanted the spinach to be just wilted, and that’s what I got using fresh. I used the “regular” sized spinach leaves rather than baby, but either would be fine. If you only have frozen chopped spinach, you could use that, but only use about 1/3 of what the recipe calls for.
Can I change the recipe?
Of course you can! There are a hundred ways to change this recipe, such as:
- add sausage (it’s no longer vegetarian or vegan, though)
- add beans, or substitute beans for tortellini
- substitute another small pasta for the tortellini
- use another leafy green, like kale
- use a different vegetable than spinach, like diced zucchini or summer squash
- top with parmesan cheese
- use more or less water to adjust the consistency of the soup
How long does this take to make?
It takes fifteen minutes. 15. That includes boiling time. This Easy Vegetarian Tortellini Soup is SO EASY, it’s really not even fair.
How would you serve this?
We have had this soup for dinner, along with a simple green salad and some crusty bread. You could eat this soup as a starter in a smaller portion, or try it for lunch.

Easy Vegetarian Tortellini Soup
Easy Vegetarian Tortellini Soup is an incredibly flavorful 3 ingredient weeknight meal that takes only fifteen minutes from start to finish.
Ingredients
- 28 oz marinara sauce (about 3 cups)
- 1 package tortellini, about 9 oz. Use vegan if preferred (I like the Kite Hill Almond Milk Ricotta Tortellini)
- 1 bunch fresh spinach, roughly chopped. (about 3 cups packed spinach leaves)
Instructions

In a medium sized pot, add the marinara sauce and 3 cups of water, and stir to combine. Turn to high heat until the sauce comes to a boil, and then reduce the heat to medium, maintaining a simmer.

Add the tortellini, and cook until they float to the top of the soup, indicating they are done cooking (mine took about 5 minutes).

Add the chopped spinach leaves, and stir well to wilt down. Turn off the heat and serve immediately.
Recipe Notes
You can adjust the amount of water to the desired consistency. If adding additional vegetables, add at the same time as the tortellini to ensure they are cooked through. If substituting leafy greens, add when you would add the spinach. If adding sausage, add pre-cooked sausage once the tortellini has cooked through.
