Summertime summertime sum-sum-summertime is here! How do I know? Because my CSA is FULL of summer squash! Zucchini, kousa, and summer squashes are popping up in there left and right, and I can’t use them all fast enough. What’s a woman to do? Shred that squash and make Easy Zucchini Scallion Fritters!
Full disclosure: my kids do not like zucchini. I don’t really even love zucchini when forced to eat it daily for weeks on end. That’s why these fritters are so amazing. They use up an entire medium-large zucchini without tasting like zucchini. They also use up some of the many scallions in our CSA box (hello, flavor!). The fritters are also brown with crispy edges, so pretty much anyone will give them a try.
Did I mention that this recipe only has 6 ingredients (7 if you count the optional sour cream/yogurt condiment)? And that they take a mere 20 minutes to assemble? Oh, and that you can MAKE THE BATTER THE NIGHT BEFORE? Yeah, that’s right. Assemble the batter, put it in a covered container in the fridge, and pump out those fritters right before dinner.
If you want to make the fritters the night before, you could store them in the fridge, and then reheat them in an air fryer or in the oven when you’re ready to serve. Just make sure they’re nice and crisp.
Feel free to substitute any summer variety of squash for zucchini in this recipe. Just shred it up and get going.
I ate my fritters with a big dollop of sour cream on the side, but you could use plain yogurt or even nothing at all. Whatever floats your boat.

Easy Zucchini Scallion Fritters
Easy Zucchini Scallion Fritters are one of the best ways to use up all of your seasonal CSA produce! With only 6 ingredients, this prep-ahead recipe is perfect for summer.
Ingredients
- 3 cups shredded zucchini or other summer squash
- 1/2 cup all purpose flour
- 2 eggs
- 1 cup sliced scallions
- 1/2 tsp sea salt, plus more to taste
- canola or avocado oil
- sour cream or plain yogurt (optional)
Instructions

Combine zucchini, flour, eggs, scallions, and salt together in a medium sized bowl.

Pour enough oil into a large non-stick frying pan to coat the bottom, and heat over medium high. Drop a small drop of the zucchini mixture in to test the temperature; it should immediately start to form small bubbles around the outide.

When the oil is hot enough, drop 1.5 tbsp or so of batter into the pan to make each fritter. You can likely fit about 4 fritters in the pan at a time.

Cook until light brown on one side, about 3 minutes, then flip over. Cook until browned on the other side. Remove carefully with a slotted spatula to a plate covered in paper towels to drain.

Repeat with remaining batter until all fritters are cooked. You can keep the cooked fritters warm in a low oven (170-200F) until ready to serve.

Serve with sour cream or yogurt on the side, if desired.
