My eggplant is finally, FINALLY growing, and I couldn’t be more excited! Sure, my two plants are likely to give me a total of 3 eggplants, but I don’t care–I’m going to enjoy those three as much as I can. Everyone knows about eggplant parmesan, so here are some of the lesser-known ways you can use those eggplants up.
Eggplant Baked Pasta by White Coat Pink Apron is a recipe from way back before I used to take professional looking photos (haha). Though it’s not much to look at, it is awfully tasty, and easy to make.
Crispy Eggplant “Bacon” by Minimalist Baker helps vegans and vegetarians get their “bacon” fix.
Eggplant Gratin with Feta Cheese by Lavender and Macarons looks so creamy and cheesy. Yum!
Baba Ganoush (which has a number of different spellings) is a Middle Eastern eggplant dip, and is one of my absolute favorite ways to eat eggplant. This version by Hurry The Food Up sounds perfect.
Jamaican Jerk Grilled Eggplant, also by Minimalist Baker, is an interesting way to spice up this otherwise mellow fruit (yes, eggplant is a fruit).
Turkish Eggplant Casserole with Tomatoes (Imam Bayildi) by Feed Me Phoebe is a take on a common Turkish eggplant dish that was served often at our family gatherings and parties.
Keeping with the theme of Middle Eastern dishes, my Dolma is another creative way to eat eggplant.
Finally, Moussaka by The Mediterranean Dish is a classic Greek “lasagna” of meat, eggplant, and béchamel sauce. What a treat!
